Recipe #4 Crispy Pork Belly 2 ways


Hi there! Today I am gonna let you know 2 ways of how I am cooking my crispy pork belly

First the ingredient we will need will be ;
300 g pork belly (depends on how many people are eating, my portion is 300 only for myself) and 2kg for like 5 to 6 people
red wine
sugar

Turn on the oven to 180 heat
Prepare a pot of boiling water
while waiting it is important to scratch the fat skin of pork belly, not to cut it thoroughly, just a bit like 0.5 cm deep and cross (I like making like bingo pattern). You can see below picture for instance

After the water is boiling use your ladle and pour the pork belly with the hot water, next
use paper towel to dry it and leave for like 15 minutes
next you will need red wine and sugar, I put 350 ml of wine with 120 sugar and cook it until it looks caramelized.
After 15 minutes use oil, salt and pepper to all over the raw pork belly and prepare to put in the pan
When put in the pan, the fat side is on the bottom (Just like the picture below)

Prepare a pan with oil in the middle and put in the oven which is already hot and check every 10 mins until it looks slightly cook and crispy. It is ready to serve with the caramelized red wine as a dip sauce. Cut the size you want and it is ready to serve

Second recipe of crispy pork belly will be
300 g of pork belly (room temperature)
salt
pepper
1 lime
rice flour (MUST)
a lot of oil

Just marinate the pork belly with salt, pepper and lime juice mix it and leave it for 15 to 30 mins, must be room temperature.
After 30 mins use the rice flour (put some salt and pepper in flour to enhance flavor) and cover the pork belly
Turn on the stove and pour amount of oil to do shallow frying/ deep frying.
until it is hot enough put the pork belly inside and cover the pan using the lid.
if shallow frying you will need to turn the pork belly to the other side after another side is crispy brown, if it's deep frying just leave it and remember to check it until it looks crispy and brown. I would prefer deep frying. Cut the size you want and ready to serve. Happy trying guys !!
