Recipe #1 FISH CAKE
The ingredient we need will be ;
Some green beans (Thinly chopped)
1/4 of capsicum (small dice)
1 Kaffir leave (thinly sliced)
Mince fish/ fresh fish (optional you can choose between this two)
Palm Sugar
Chilli paste
Tamarind
For the sauce, I am making Indonesian dipping sauce which contain ;
chopped spanish onion, dice cucumber, julienne carrot, and plenty of fresh lime juice until it cover well all the ingredient and to marinate all at once with all of the sauce ingredients. It is so called Martabak egg sauce
As for the thai dipping sauce instead of Indonesia, originally you can just use
50 gr sugar
50 g vinegar
1 large red chillied to be finely chopped
small dice cucumber
5g finely chopped ginger
1 spring of chopped coriander
As I will explain how to make the sauce, firstly you need to mix sugar and vinegar together in a pan until it is thicken while stirring it. After it is thick, pour in a new clean bowl and let it cool down (put in the fridge to fasten the cooling process) . After like 25 mins or sometime and the sauce is now cool add cucumber, chili, ginger and chopped coriander. Mix in to 1. Ready to dip in your fish cake !
So, let starts, first of all the fish cake I am making is what so called thai fish-cake which the first time I try was in the cafe where my favorite thai boys in the cafe was making it for me. It was so good I couldn't help myself finishing a bowl.
So first thing first if you want to cook for big event or family with lots of people I am suggesting to use the mince fish, but because I was making for myself I was using a fresh flat fish and filleting the fish myself. So after filleting and removing the skin just cut it into rectangle shape, after that put add some palm sugar, tamarind, and chilli paste. After that together with the fish mix it (you can use blender, mixer, or roubo coup) Remember not to overwork it. We don't want our fish mince too much. Next step, mix your dice capsicum, sliced kaffir leaves, and chopped green beans to be mix with the minced fish. After that you can shape it to any shape you want, I just simply make it round and shallow frying it to taste if it taste great, if it's not we can add salt and pepper (depends on how you want it to be). After you are confident then shaped everything, you can rather shallow frying which take more time or deep frying if you have fryer or you can use a lot of oil and deep fry it in your pan.
