Recipe #5 Flourless Choc Cake


In this recipe I am making today is a chocolate cake without using any flour. So the ingredient will be;
100 g Dark Chocolate
50 g Unsalted Butter
10 ml Brandy
50 g Caster Sugar
50 g Ground Almonds
2 Eggs (Egg white and yolk must be separated in this case)

Additional
white cream
100 g chocolate

You can use any dark chocolate you fancy I am using "Lindt Excellence" dark chocolate. Prepare a pan with water, when the water is boil use a steel bowl that filled with dark chocolate and butter above the pan with boil water (In term double boiler)

It is essential to remember that chocolate and water are not friend, we don't want to melt the chocolate for a very long time that it looks watery. When you feel like the chocolate is acceptable remove from heat and while it is hot pour the brandy and stir.
Next thing put the ground almonds, 30g sugar, egg yolk and stir. Leave it aside.
With a different bowl 2 egg white and 20g sugar mix it until it looks fluffy like the picture below

You can either use a mixer or hand (It takes time using hand) pour half of the mixed egg white to the chocolate mix and stir,  pour the rest of it and stir.
In a cake mould put baking paper and spray oil so it won't stick. Bake 160 degree for 35 to 45 mins.
During this time you can make chocolate ganache. Simply prepare double boiler again and just put the dark chocolate and white cream then when it melts, stir until it looks delicate.
When the cake has done cooking, cool down, add ganache (depends on how creative you are) and serve. During cool down process you can turn it upside down and store in the fridge for like 12 minutes. I have done mine, have you? Tell me what you think !
