Recipe #6 Quiche Lorraine


Ingredients :
Short Paste
200 g Flour
100 g Butter
50 ml Water

Filling
100 g Streaky Bacon or a rash of bacon
60 g Gruyere Cheese (grated)
30 g Onion (finely diced)
2 Eggs
100 ml Milk
100 ml Cream

The first thing you will need to do is prepare 200 g of flour and 100g of shredded butter or soft butter and mix it together on the steel bench or steel bowl until they combined and feels like a very soft sand texture then slowly add water then continue to rub the mixture and slowly add it all and rub again the mixture. The next step will be wrap in a cling wrap like a tube shape and let it rest for 30 mins in the fridge.


Meantime, cut the bacon into the shape you want, I dice them, along with the onion as well.
Next step, saute the bacon and then onion together in the pan. When it is done leave aside, let it cool down.

(Well you can be creative by putting other meat aside of bacon, depends on your taste but it should be cut to a small pieces)

It mustn't has reached 30 mins yet, in this time you can add 2 eggs, milk and cream to a bowl and mix it. Leave aside in the fridge.

After 30 mins, take out the quiche dough and shaped it using a quiche mould, or like the one below (any shape)

after the dough mixture is in the mould and shaped the way you want and blind bake**  it.
(Blind bake is  term when we don't want the pastry to rise that's why we put something above it, and that something could be rice or lentil, or peas)

Put peas, or rice above the pastry could be in a cling wrap, or baking paper.

Plainly like that without add anything bake it for 180 degree for like 6 to 9 mins

During these time prepare your saute bacon, onion, and Gruyere cheese, which I simply buy at coles supermarket and shred the cheese and mix it all together, I add white pepper to enhance flavor  (I think shredded cheese and Parmesan powder) would work too

After 8 mins we can take it out and the pastry should look crumble and look really tempting, during these time, take off the lentil from your pastry and fill in with your mixed Gruyere cheese, saute bacon and onion inside the fill. Lastly pour the egg, milk and cream mixture in the fill until you think is enough. Remember we don't want it to over-filled and spill.
Last but not least bake in oven 160 degree for 30 to 40 mins. and Ready to serve !


Gruyere cheese is a type of hard yellow cheese from Switzerland.
Another category of hard yellow cheese are Emmental cheese, Edam Cheese, Cascaval cheese, Gouda cheese, Cantal cheese, Jarlsberg cheese.

If you can't find any type of the type of cheese above, that's why I said shredded cheese or parmesan could probably suit. Happy trying !
