Recipe #8 Squid and Scallop in Thai dressing
Ingredients will be
3 Scallops
3 pieces Squid, cut into triangle and scored
Sauce
30 ml Lime
3 g Chilli paste
¼ Lemon grass, crushed
3 ml Fish sauce
15 ml Peanut oil
15 g Palm sugar
5 g Garlic
30 ml Coconut milk
5 g Vietnamese mint, chopped

(Vietnamese mint, smells stronger than an usual mint)
Today we are making quite simple dishes, first of all we are going to make the Thai sauce. Prepare a bowl to mix the lime juice, chili paste, 3 ml of fish sauce, 15 ml of peanut oil, palm sugar, minced garlic, coconut milk and chopped Vietnamese mint, lastly your crushed lemon grass then mixed
pick your scallop and clean if necessary, next cut your squid and score (go to recipe #2) to see how to score squid and leave aside.
I put a lil bit of oil only to my squid then add salt and pepper then put aside while the scallop just plain like that on the hot pan when the color is good at the both side, I am ready to plate, next saute the squid (Remember to cook it separately between the scallop and squid. Scallop comes first.)
When its ready and you have plated up your squid and scallop, stir your dressing and add as you pleased. Nom Nom !
