Recipe #9 Chicken Breast filled with Spinach Roasted Capsicum and feta


The ingredients for this recipe will be

Chicken supreme (Which is breast and the bone of the chicken wing)
Salt, Pepper, and oil

Filling:
Saute Spinach
Half Capsicum (roasted)
Fetta (to be crumble)

Sauce;
Onion
Another half Roasted Capsicum
White wine
Balsamic

Side;
Polenta
200g of butter

This is kind of complex menu but easy, shall we start?

So don't buy it wrong, if it's drumstick and chicken thigh it is so called Maryland. So after you got this part of chicken remove the skin and stab a hole inside the chicken breast (like the picture below)

The purpose is to stuff some vegetables inside but be careful when you stab in it as we don't want it to penetrate. Wrap it and put in the fridge

Next, Roast you whole capsicum marinade with salt pepper oil and put in the oven for 10 mins in 175 degree. Remember to put a timer. Meanwhile dice onion 

After 8 mins take it out your roasted capsicum and leave aside to cool down. Cut the capsicum (the smaller the better) Cook half and save half then cook together with the spinach (saute it), leave aside and crumble your fetta and mix it together. These 3 saute spinach, dice roasted capsicum and crumbled fetta stuff inside the chicken breast at the back you stabbed at.

Next thing to do I marinade the chicken with salt, pepper and oil you can add any herbs or cayenne for spiciness. Prepare hot stove pan and put a bit of oil. Seal all side of the supreme chicken and put inside the oven 180 and check it time to time, like every 10 mins.

SAUCES
Meanwhile prepare hot pan on stove with a bit of oil again and cook your onion, when the color of onion change a bit add the rest of capsicum and white wine apart from the stove as we don't want it to catch fire, let it simmer a bit much and add the black balsamic vinegar and let it simmer again and put aside to cool down a bit.

Next, Prepare water on the stove. When it is boiling prepare whisk and pour the Polenta inside the water and keep stirring until it is thicken and stop. Add you salt and pepper for flavor. Click to the video below for Polenta's cook instruction :

Polenta is nice eaten when it is hot, that's why cook in this order is a perfect timing

Mix or Blend the SAUCES until it looks not-so-thick liquid with either blender, mixer or roubocoup

Time to plate. After you check and your chicken actually look medium cook or the temperature of the chicken reach 75 degree, it is ready to be serve. Plate up the way you want it !

NOTES: Some places don't actually have polenta in the other hand you can replace it with mash potato. It's not bad at all kind of idea
