Recipe #16 Gazpacho
Today we are making Gazpacho, it's a traditional cold soup from Spain serve as entree. Easy and what you will need are:
serve portion : 1
1 spanish onion
1 lebanese cucumber (or any would be fine)
1 capsicum
bagels/ white bread
parsley/ coriander
10 sherry
10 red wine
olive oil
garlic and rosemary (optional)
salt and pepper to taste.
First things first brunoise the following of Spanish onion, cucumber (seeded off), capsicum

Description : Brunoise is a type of cube cut
The purpose of having it seed off because we don't want out mixture to become so watery. Save each of your brunoise some for the garnish. Next step mix all your brunoise of onion, cucumber and capsicum into a bowl add olive oil, red wine and sherry to taste. Don't add salt and pepper at this point.
Leave it in a cool fine place or in the fridge for 30 mins to 1 hour. Mean time you can prepare little garnish. I am using chopped coriander, bagels and white bread. For the white bread I cut dice and put in in the oven with the whole bagel for 120 degree and check as you go for 10 mins or more. Once it is crispy leave aside. I chopped garlic and prepare some dried rosemary for my croutons. Firstly I add oil on the pan and garlic toast till it is slightly brown and put the croutons on the pan with brown garlic and sautee it. For the last touch i sprinkle rosemary and sautee a bit more. I couldn't believe it taste brilliant.
After an hour, and the mixture of vegetable is ready to rock ! Take out from the fridge and put inside your blender (I add some croutons in the blender and I smash the bagel with my hand and put inside in the blender too) and mix it all up, before it comes to soft ready product stop it and give it a try if there is anything missing. I miss salt and bits of olive oil, there we go last touch of mix ! It is finially ready to be served ! FInish with some garnish and yes ! don't leave your croutons unaccompanied ! Hora de la cana ;)
